We’re getting fancy with dinner tonight. Paella on the menu, and super easy to make! 4 cups chicken broth 1 packet saffron 1 tbsp olive oil 1 yellow onion, diced 2 cloves garlic, minced 1 roma tomato, diced 1 chorizo sausage, sliced into half moons 1 tsp. paprika 3/4 cup arborio rice 1/2 cup peas 8 oz. shrimp Heat chicken broth and saffron on stove. Heat olive oil in large pan over medium heat and add onion, cooking 4-5 minutes until softened. Season with salt and pepper. Add garlic to the pan and cook for another 30 seconds, until fragrant. Add chorizo, diced tomato, and half the paprika to pan and cook, tossing for 4-5 minutes. Add the dry arborio rice to the pan and toss to coat. Cook, stirring every 1-2 minutes. Add 2 cups of warmed chicken stock to pan. Bring to a boil, then reduce to a low simmer for 25-30 minutes, stirring occasionally. Add additional chicken stock as needed. When rice is almost al dente, stir the peas into pan and increase the heat to high for 2-3 minutes until a golden brown crust begins to form on the edges of the pan. Season the shrimp with salt, pepper, and remaining paprika.
